Four Winds Brewing in Delta BC has released their first open wood fermented beer.
Called Wallonian Bitter, a reference to the rolling hills of Wallonia in Belgium, this Belgian inspired bitter farmhouse ale was open fermented in an oak foedre* and then keg conditioned for a smooth and fluffy mouthfeel. They say this gives the ale subtle hints of oak and tannin, which drape the palate and unfold into a lingering bitter finish.
The beer is only available on draft and for growler fills at the Four Winds tasting room. Hopefully it turns up at some bars too, like Childhood did.
6.5% ABV; 45 IBUs
*A foedre is a large oak vat that is often used for beers that require long-term fermentations, especially mixed-fermentation beers.
