Dageraad Releases Entropy No. 4: Gin Barrel-Aged Spiced Saison

Dageraad Brewing in Burnaby BC has announced the release of the fourth in their Entropy series of barrel-aged beers.

Entropy Series No. 4 is a gin barrel-aged spiced saison that was created by taking their Lake City Farmhouse ale and aging it in a recently-emptied gin barrel from Deep Cove Brewers and Distillers.

Lake City Farmhouse is brewed with small amounts of rosemary and sage, among other spices, and they say that it blended beautifully with the botanicals used in Deep Cove’s gin—the mix of flavours is said to be so harmonious that it’s difficult to tell where the beer ends and the gin begins.

Entropy Series No. 4 will go on sale at noon on Wednesday, October 4. Bottles will cost $12 each, with a limit two per customer (only 19 cases available)

They don’t expect this beer to develop substantially in the bottle, so it’s best to consume this beer relatively fresh.
